During the winter all I want to eat is soup, and living in New York City we have unlimited options of soup (have you seen that Seinfeld episode?). However, I really wanted to make a soup from scratch for H so I know where all of the ingredients are from. I have been looking around for an easy soup recipe that H and my husband will enjoy, and I finally got inspiration from my friend Willy B Mum, I altered her recipe some but it was still great in the end
Ingredients:
8 Medium sized tomatos, I used ”vine-ripened” tomatoes
Half an onion large
Bunch of fresh basil
Olive Oil
Salt and Pepper
A few garlic cloves
Fresh parmesan cheese
Directions:
1. Preheat oven to 400 degrees
2. Chop up tomatoes and onion place into nonstick cake pan
3. Tear a handful of basil leaves into shreds and place on top of the tomatoes and onions
4. Cover everything with olive oil
5. Sprinkle with salt and pepper
6. Add garlic cloves
7. Cover with aluminum foil and bake for 30 min or until the onions look soft
8. Use blender/hand blender to make into a smooth soup.
9. Serve hot or cold with parmesan cheese as a garnish
You can add some red wine or vegetable stock if the soup is too thick.

Soup looks fantastic and I’ll definitely be trying it! My tastes aside, H. actually ate this? I need you to come whip Justin into shape with his veggie consumption. He is saying at dinner recently “I’m a carnivore but I’m really trying to be an ominvore.”
H loves to dip stuff so if he has bread that he can dip into the soup it is a hit!
Plus this is so easy if you do all the prep work Justin could put it all together in the pan and pour the oil, salt and pepper on it, work the blender and he might be more inclined to eat it if he made it himself.
If you pair it with something you know he eats then dinner might be a success.

I am salivating right now. I am going to have to find some fresh ingredients to make this. I also have a Food Network Magazine issue that had GRILLED CHEESE CROUTONS that were placed on top of tomato soup. Amazing combo, right?
